Protein packed and high in fiber, this hearty soup will keep you filled while giving your immune system a boost.
6 C. soaked red lentils
3 C. tomato paste or puree
2 medium yellow onions, chopped
5 medium carrots, chopped
6 garlic cloves, chopped
6 C. vegetable stock
1 tsp cumin
1/2 C. lemon juice
Cracked sea salt (to taste)
Cracked black pepper (to taste)
Mix all ingredients in an eight-quart stock pot and cover. Simmer over low heat for an hour, stirring often. Remove from heat and puree half the soup (all if you prefer a smooth texture), then mix back in.
Garnish suggestions: lemon wedge, plain Greek yogurt, Cayenne pepper, fresh cilantro
